Emulsions are colloidal systems in which a liquid is dispersed in a second immiscible liquid. There is a very broad interest in such systems by scientists in academia as well as in industry. This interest is evidenced by an extensive research activity dedicated to a quantitative understanding of the formation and stabilization of emulsions. Intensive research is dedicated to questions about how the bulk properties of the liquids and the interfacial behavior of the emulsion droplet surfaces contribute to the stability of an emulsion, which is of principal importance for many applications. The control of the stability of an emulsion, or in some particular cases to break, is essential for various modern technologies, such as in cosmetic and food industries, medicine, drug delivery or tertiary oil recovery.

This book provides in a comprehensive way the current knowledge of the fundamental and applied aspects of emulsions, including the inherent liquid-liquid interfaces and emulsions films as main building blocks. The chapters show a broad range of topics, ranging from the state of art understanding of interfacial and thin liquid film properties as essential impacts on the formation and stabilization processes of emulsions. A number of well renowned experts contributed to the highly recommended book.
